cups brown lentils, uncooked
- 2
quarts water
- 1
yellow apple, cored and chopped
- 1/4
cup golden raisins
- 1/4
cup non-fat lemon yogurt
- 1
teaspoon curry powder
- 1/2
teaspoon salt
Directions:
- Combine lentils and water
in a large saucepan. Bring to a boil over
high heat. Reduce heat and simmer 20 minutes, stirring occasionally.
- Stir apple and raisins
into saucepan; cook 10 minutes or until lentils
are tender. Drain well.
- Place lentil mixture in
a large serving bowl.
Stir in yogurt, curry powder, and salt until well blended. Yum
yum!
