Rice
Pudding
- 2
cups of pre-cooked brown rice (or use left-overs from
Rice Pilaf recipe)
- 3/4
cup vanilla flavored soy milk (I use Silk by White Wave)
- 1
egg (I use Eggland's Best)
- 1/2
cup diced pitted dates
- 1/2
teaspoon cinnamon
- 2
Tbsp. ground flaxseed meal
Whisk
soymilk and egg until blended.
Add in rice, dates, cinnamon and mix to evenly distribute.
Put into a small baking dish (1.5-2 quart) that has been
sprayed with something like Pam. Sprinkle flaxseed meal
on top.
Cover.
Bake in preheated oven at 350 degree for 30 minutes.
Makes 4 servings or 3 generous ones. Delicious warm right
out of the oven!
