What do you cook for big holiday meals to accommodate guests and family members who are not vegetarian?


A very reasonable question! I will give you the menu and recipes I used for our special Easter meal this year, accommodating both vegetarians and non-vegetarians.

Honey-baked ham
Mashed potatoes (I use Yukon Gold potatoes and leave the skins on and low-fat milk as needed)
Fresh whole grain breads from a local bakery
Fresh vegetables (I steamed asparagus spears)
Curried Lentil with fruit salad
Black bean and artichoke salad
Black Forest Fudge Cake (Prevention Magazine recipe from May 2001 - you will need to get this recipe from an issue in the library as Prevention Magazine would not give me permission to post it on my website)

This meal provided something for everyone with a wide variety of tasty, nutritious and easy to prepare foods. In particular, of importance is that there is a very good low-fat protein source (the 2 bean salads) for the vegetarian diners.
