fantastic recipe from my husband “Dr. Dick”)
1 Large Acorn Squash
1/2 Cup Apple Butter
1 tsp Smart Balance Margarine (or Olive Oil)
2 Tbsp Raisins (organic if available)
• Preheat
oven to 350 F
• Wash exterior of squash
• Cut in half longitudinally
• Remove seeds and strings from cavity
• Place cut-side down on a piece of aluminum foil in a shallow
baking pan
• Add 1/2 cup water to the pan
• Bake at 350 F for 40 min
• Remove from oven and turn cut-side up
• Put half the apple butter into each cavity
• Put 1/2 tsp margarine or oil and 1 Tbsp raisins into each half
• Continue baking at 350 F for an additional 20 min or until squash
is tender
Each half-squash is a delicious serving that will often leave
you wanting more!
