Apple-Butter
Acorn Squash

1 Large Acorn Squash
1/2 Cup Apple Butter
1 tsp Smart Balance Margarine (or Olive Oil)
2 Tbsp Raisins (organic if available)

Directions:
Preheat oven to 350 F
Wash exterior
of squash
Cut in half longitudinally
Remove
seeds and strings from cavity
Place cut-side down
on a piece of aluminum foil in a shallow baking pan
Add 1/2 cup water to the pan
Bake
at 350 F for 40 min
Remove from oven and turn cut-side
up
Put half the apple butter into each
cavity
Put 1/2 tsp margarine or oil and 1
Tbsp raisins into each half
Continue baking at 350
F for an additional 20 min or until squash is tender
Each half-squash is a delicious serving that will often
leave you wanting more!
