Apple Cabbage Slaw
(modified from a recipe by my good friend Rebecca Dworschack)

  • 1 small head of red cabbage, finely grated (I used an 8 oz bag of shredded red cabbage)
  • 1 large thinly sliced or diced Granny Smith apple
  • 1 very thinly sliced or diced sweet onion
  • 1/4 c. lemon juice (I used the juice from one fresh lemon)
  • 1/2 c. parsley, chopped
  • 1/2 c. watercress, chopped
  • 1/2 c. plain hummus
  • 1/2 c. yogurt
  • ground black pepper to taste
  • 2 oz blue cheese (I used Blue Cheese Veggie Crumbles by Galaxy, available in my regular grocery store)
  • 2 tsp toasted walnut pieces (good source of the veggie version of omega-3 fatty acids)

Mix all together and chill.
Special note - cheese and nuts are garnish
