From www.madamnutrition.com, the web site by Erin Dummert, RD. Not to be confused with healthy cookies, but certainly “healthier” than a typical store-bought cookie! Eat a few and then put the rest in the freezer to take out when you need a bit of chocolate once in a while!

  • 1 –1/2 cups old fashioned oats
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup Great Northern beans, drained, liquid reserved
  • 3 T butter, softened
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dark-chocolate chips

  • Heat oven to 350°F. Lightly coat 2 baking sheets with cooking spray.
  • In blender, process oats until finely ground but not powdery.
    3. Combine with flour, baking powder, baking soda, and salt in a bowl.
  • In a clean blender, puree beans and 2 tbsp reserved bean liquid until smooth.
  • Combine bean puree, butter, sugar, eggs, and vanilla in a separate bowl and beat well.
  • With the mixer on low speed, beat in oat and flour mixture.
  • Stir in chocolate chips by hand.
  • Drop batter (by the tablespoon) onto baking sheets. Bake 15 to 17 minutes until centers are firm and edges are lightly browned.
  • Transfer to wire rack to cool.

Makes ~36 cookies.

In my book, I have included the names of several dozen cookbooks which feature recipes that are compatible with (or that can be modified to fit) the ultra-healthy diet I follow, including some resources which are free.

I am also collecting recipes to include in a future edition of my book as well as to be featured on "Menus and recipes".   I have asked readers to send me any recipes that they have found to be great-tasting and easy to prepare, and that emphasize the nutritional guidelines which are outlined in my book.  I will also consider taking people's favorite "normal" recipes and posting versions which are modified for maximal cancer prevention.

If you have a recipe you wish to submit for possible inclusion in either my book or on this web page, please send it to me.  If the recipe is from a cookbook or other printed source, please include the name, author, and publisher of the source so that I can ask for permission to reprint the recipe.  If it is a recipe you created, or a family favorite, please indicate that, also.
