Butter Tofu Pudding
husband has often called chocolate-peanut butter ice cream *the
necessity* :-) This pudding is a delicious and healthy substitute.
I modified a recipe by someone named Chris that I found on a recipe
exchange web site.
ounce boxes of silken tofu (I used firm)
cup cocoa powder
cup maple syrup (I use the real thing)
Tbsp. pure vanilla extract
Tbsp. smooth peanut butter
all ingredients together in a blender or food processor until
smooth. Makes 6-8 servings. Chill. Yum, yum!
