Curried Lentil with Fruit Salad

  • 1-1/2 cups brown lentils, uncooked
  • 2 quarts water
  • 1 yellow apple, cored and chopped
  • 1/4 cup golden raisins
  • 1/4 cup non-fat lemon yogurt
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt

Curried Lentil with Fruit Salad (cont.)

Directions:

  • Combine lentils and water in a large saucepan. Bring to a boil over
    high heat. Reduce heat and simmer 20 minutes, stirring occasionally.
  • Stir apple and raisins into saucepan; cook 10 minutes or until lentils
    are tender. Drain well.
  • Place lentil mixture in a large serving bowl.
    Stir in yogurt, curry powder, and salt until well blended. Yum yum!

Yield:  Makes 6 - 1/2 cup servings.
