I enjoy taking time to cook meals from scratch for my family.  However, there are days in which something is needed for supper really fast.  This recipe fits that bill.  Even though my family is not as vegetarian as I am, this is one dish they eat and don't really even know it's not ground beef.  If I do have some organic ground beef on hand (my grocery store carries Laura's Beef which is organic), it's easy to make two pans of the Sloppy Joes, one with meat and one vegetarian.
  • 1/2 medium onion - chopped
  • 1 Tbsp. olive oil
  • 1 package Green Giant Harvest Burgers for recipes
  • 1/2 bottle your favorite BBQ sauce - approximately 1 cup
  • 1/3 - 1/2 cup water

Directions:

  • Brown the onions in the olive oil 2-3 minutes.
  • Add the package of Harvest Burgers for recipes.
  • Add the BBQ sauce and water and simmer until the veggie crumbles are thawed and enough water has evaporated to make a nicely thickened sauce.

Serves 4 easily.

Serve over a baked potato (can be done in the microwave while the Sloppy Joes are cooking) or in a whole grain bun with some other cooked veggies, salad (have your family make this), and fruit.  Voila - easy and fast and look at all the fruits and  vegetable servings you are eating with this meal!

In my book, I have included the names of several dozen cookbooks which feature recipes that are compatible with (or that can be modified to fit) the ultra-healthy diet I follow, including some resources which are free.

I am also collecting recipes to include in a future edition of my book as well as to be featured on "Menus and recipes".   I have asked readers to send me any recipes that they have found to be great-tasting and easy to prepare, and that emphasize the nutritional guidelines which are outlined in my book.  I will also consider taking people's favorite "normal" recipes and posting versions which are modified for maximal cancer prevention.

If you have a recipe you wish to submit for possible inclusion in either my book or on this web page, please send it to me.  If the recipe is from a cookbook or other printed source, please include the name, author, and publisher of the source so that I can ask for permission to reprint the recipe.  If it is a recipe you created, or a family favorite, please indicate that, also.
