Pizza (cont.) Whole
Wheat Pizza Dough (using bread machine)
1-1/2 c. plus 2 Tbsp.
warm water; 2 Tbsp. olive oil; 1-1/2
teaspoons salt; 2 Tbsp. honey; 2 c. plus 2 Tbsp. whole
wheat bread flour; 2 c. unbleached bread flour; 2 Tbsp.
vital wheat gluten; 1-1/2 tsp. instant yeast
Directions: Place in
bread machine and select the dough cycle.
Check after 5 minutes;
adjust the water or flour to produce a soft ball.
At end of dough cycle,
remove half the dough. Repeat
the following instructions with the second half of dough.
On a floured
surface, shape into an 8-inch diameter disk; flatten to
12 inches. Let rest for several minutes; resume stretching
to 14 inches. Sprinkle
1 Tbsp. cornmeal on pan, move dough to the pan, brush
with olive oil, add sauce and toppings, and bake at 450
degrees F. for 7-8 minutes. Add
cheese, bake 2-3 minutes until cheese melts.
