cup brown rice (I use Basmati Rice by Lundburg
Farms)

3 cups water
- 1
tart apple (like Granny Smith) - wash,
dice into small pieces
- 1/2
cup golden raisins

teaspoon butter
- salt
and pepper to taste
Directions:
- While
rice is cooking (takes ~45-50 minutes), melt butter in saucepan.
Add apples and raisins to melted butter and heat until fruit
is slightly softened.
- When
rice is done cooking, fluff with fork. Season with salt and
pepper. (I omitted this step accidentally and didn't miss it
at all.)
- Turn
into serving dish and then top with apple-raisin mixture.
Makes
about 5 cups of rice. Serve as a side dish with any entree like
salmon, chicken, or tofu. (save about 2 cups to make rice pudding
the next day, or even that evening.)
