Rice
Pilaf
- 1-1/2
cup brown rice (I use Basmati Rice by Lundburg Farms)

3 cups water
- 1
tart apple (like Granny Smith) - wash, dice into small
pieces
- 1/2
cup golden raisins

teaspoon butter
- salt
and pepper to taste
While
rice is cooking (takes ~45-50 minutes), melt butter in saucepan.
Add apples and raisins to melted butter and heat until fruit
is slightly softened. When rice is done cooking, fluff with
fork. Season with salt and pepper. (I omitted this step
accidentally and didn't miss it at all.) Turn into serving
dish and then top with apple-raisin mixture. Makes
about 5 cups of rice. Serve as a side dish with any entree
like salmon, chicken, or tofu. (save about 2 cups to make
rice pudding the next day, or even that evening.)
