Rice Pudding

  • 2 cups of pre-cooked brown rice (or use left-overs from Rice Pilaf recipe)
  • 3/4 cup vanilla flavored soy milk (I use Silk by White Wave)
  • 1 egg (I use Eggland's Best)
  • 1/2 cup diced pitted dates
  • 1/2 teaspoon cinnamon
  • 2 Tbsp. ground flaxseed meal


  • Whisk soymilk and egg until blended.
  • Add in rice, dates, cinnamon and mix to evenly distribute.
  • Put into a small baking dish (1.5-2 quart) that has been sprayed with something like Pam.
  • Sprinkle flaxseed meal on top.
  • Cover. Bake in preheated oven at 350 degree for 30 minutes.

Makes 4 servings or 3 generous ones. Delicious warm right out of the oven!
