Salmon Cracker Spread

  • 2 ripe avocados – peel and remove the stone
  • 1/2 # soft tofu – put in bowl with avocados
  • 1 small can salmon (I pick out the small skin pieces but leave in the soft bones) – drain and put in bowl with other ingredients
  • 1/2 teaspoon curry
  • 2 drops Tobasco sauce (or to taste)

Salmon Cracker Spread (cont.)

Mix all ingredients together in medium size bowl. Smash with a fork or even a potato masher. Leave a little lumpy.

Serve with some whole grain crackers. Triscuits, a nice sturdy cracker for this dip, now are available both low-fat and trans-fat free. Also good served with whole grain pita bread, either fresh or toasted.
