What is that? The perfect vegetarian solution to be or to complement
the traditional Thanksgiving Dinner. Read more about it at the Tofurky
web site. I read about this last year, but my local Whole Foods
Store sold out before I could buy one. So this year I bought one
early to try ahead of time. Tofurky represents the ultimate
in creativity of food product development! A small tofu *turkey
breast*, complete with wild rice stuffing, mushroom gravy, and tempeh
drumstix - all in a box. Once thawed, everything takes less than
one hour to prepare.
The results? My husband said "This tastes great - I could eat this several times each year!" My 16 year old son? - well - it was an interesting experiment! I loved how it looked, tasted, and the ease of preparation. It's a little pricey ($21.98 - the way it serves 8), but for a special occasion, it cannot be beat!
I served it with mashed potatoes, steamed broccoli, and stir-fried vegetables (onion, green, red and yellow peppers, carrots, cherry tomatoes, olive oil, chopped fresh garlic, and grated fresh ginger). It all made for an easy, hearty, tasty, and beautiful meal. Enjoy!

I am also collecting recipes to include in a future edition of my book as well as to be featured on "Menus and recipes". I have asked readers to send me any recipes that they have found to be great-tasting and easy to prepare, and that emphasize the nutritional guidelines which are outlined in my book. I will also consider taking people's favorite "normal" recipes and posting versions which are modified for maximal cancer prevention.
