Turkey/Tofu Combo Meal

This is an example of how I feed myself and my family without cooking two complete meals:

  • 1 - 12 oz. package lemon-pepper seasoned turkey breast (from The Turkey Store)
  • 1 - 12 oz. package 5-spice tofu (Nasoya)
  • Instant brown rice


Put the turkey breast in a baking dish coated with non-stick spray.  Oven bake at 350 for 30 minutes, or until the turkey is lightly browned and no longer pink in the center.  Cut the block of tofu into 4-5 slices.  Save the liquid.  Put tofu in a baking pan coated with non-stick spray and bake at 350 for 30 minutes.

Cook instant brown rice in the seasoned liquid from the tofu, adding water if needed.

Makes 2-3 servings of turkey and 2-3 servings of tofu.  Serve with steamed vegetables and/or mixed green salad.
